Ever since I started making chia parfait, I’ve been trying to find good toppings or sauces that would go well with them. At the grocery store, I was looking at a jar of nutella and thought to myself, wouldn’t it be nice if this had no sugar, milk, or soy? Then I realized that it’s actually quite easy to make homemade sugar-free nutella as you only need hazelnuts, cocoa powder, a sweetener (I used stevia powder), and coconut oil (optional) if you want it to be more runny. I couldn’t find whole hazelnuts so I used hazelnut flour instead! Both ways work perfectly fine!
I love this spread as you can use it on so many dishes. You can dip any fruit in it, you can spread it on toast, you can add it to parfaits, and the list goes on. Making it homemade taste even better than the store-bought one which has so many unnecessary ingredients. All you need to make this delicious bad boy is a food processor and 20 minutes of your time (or less if you have a good food processor).
Put the hazelnut flour into a food processor and process for about 10 minutes. You will need to scrape the sides from time to time. The flour should start sticking to the sides and it should become a little oily.
Add the cocoa powder and 1 tbsp of coconut oil. Mix again for 5 minutes. Scrape the sides as needed.
Add the 0.5 tbsp of coconut oil with the stevia powder and process for another 2-3 minutes scrapping the sides if need be.
If you want the nutella to be even more runny, then add 0.5 tsp of coconut oil at a time until the desired consistency is reached.
