My favourite herbs to use for salads have always been cilantro or basil and with the right combination of oils and vinegar, you can make the most wonderful salad dressings! It doesn't even need to be super complicated, like my Low Carb Grilled Shrimp Avocado Salad, which uses fresh basil for it dressing.

Cilantro is packed with such an intense flavour that this salad doesn't need a very complicated dressing. What I love most about it is that it can be used in a variety of dishes. Adding cilantro to my Paleo Chicken Masala gives the curry an amazing fragrance and taste. Using Japanese Konjac noodles instead of rice noodles in this cilantro flavoured Thai Pork Salad is a must!

An easy avocado salad recipe
This avocado salad recipe takes no time to make, you can switch the veggies around as you like and can be used either as a side or a full meal. Seriously guys, it's a delicious recipe with a wonderful easy cilantro dressing!
The prices of avocado these days are getting a bit ridiculous, just one costs me about 2$. I guess it's simply not their season. Their usual price is usually around 1$ here, but I find they are much more expensive than in Canada. It's probably because they all have to get imported from Mexico. The farmers in Japan grow a few, but not enough to feed the population. Especially considering avocado trees take 5 years to bear fruit.
This year I decided to grow some herbs because fresh ones aren't readily available throughout the year here in Japan. All of my seeds have finished germinating and are in little cups sprouting along 🙂 It's still too cold to place them outside, but I think I'll be able to do so in a couple of weeks.
I've planted basil, thyme, parsley, cilantro, rosemary, arugula, radish, lemon, and yellow zucchini. They have all started to sprout and can't wait to have fresh herbs in my garden for the following months! I can't wait to make different cilantro recipes with my cilantro and will upload more recipes as it grows! If you're not a fan of cilantro, you can definitely try this cucumber tomato salad as it uses dill instead of cilantro!

Low Carb Paleo Avocado Cucumber Tomato Salad
Ingredients
- 1 yellow pepper (160g)
- 2 tomatoes (160g)
- ½ red onion (80g)
- 2 avocado
- 1 cucumber (190g)
Dressing
- 3 stems cilantro
- 1 tbsp lemon juice
- 2 tbsp olive oil
- ½ tsp Himalayan salt
- ½ tsp black pepper
- ¼ tsp garlic powder
Instructions
- Dice the yellow pepper, tomatoes, cucumber and red onion. Cube the avocado. Place all of the cut vegetables in a large bowl.
- Chop the cilantro. Add it to the bowl with the rest of the dressing ingredients. Toss gently to mix.
