Low Carb Paleo Avocado Cucumber Tomato Salad

A refreshing salad with a light flavourful lemon & cilantro dressing.

Ingredients

  • 1 yellow pepper 160g
  • 2 tomatoes 160g
  • ½ red onion 80g
  • 2 avocado
  • 1 cucumber 190g

Dressing

  • 3 stems cilantro
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • ½ tsp Himalayan salt
  • ½ tsp black pepper
  • ¼ tsp garlic powder

Instructions

  • Dice the yellow pepper, tomatoes, cucumber and red onion. Cube the avocado. Place all of the cut vegetables in a large bowl.
  • Chop the cilantro. Add it to the bowl with the rest of the dressing ingredients. Toss gently to mix.

Notes

Store in an air-tight container in the refrigerator for up to 3 days.
