    I have been ridiculously busy this past week and I didn't feel like cooking because I was always too tired.  I've had to find a new apartment to live last minute and so have been visiting a few places this past week and I finally found one! I'm signing the lease next week and luckily my coworkers said they would help me move my furniture! Apartment hunting in Japan can be so nerve-wracking and so expensive 🙁  The way the real estate works here is completely different from back home. When moving to a new apartment, you always need to have a lot of money in the bank account because the real estate companies like to charge a handling fee (1 month rent), a key money (a gift to the landlord equaling to 1 months rent), a deposit (1 months rent - which you will never get back), lock exchanging fee, a cleaning fee, fire insurance, guarantor company, etc...If you ever move to Japan, remember that you will need a LOT of money for the start-up costs.  The owners of the apartment buildings and houses don't usually know how to find tenants so 99% of the time, they ask a real estate company to find tenants for them, thus the handling fee. Luckily the new place I found didn't have key money or deposit, but it did have a bunch of other fees. Sigh.  I'll be moving in a couple of weeks so I won't be able to upload as many recipes a week because I have to pack!

    With this busy week, I didn't have a lot of time to cook, so I stuck with something simple that I could just throw in the oven and leave it to cook.  I just tossed some chicken wings and drumsticks in some olive oil and salt/pepper and baked them in the oven until crispy.  Then I coated them with some homemade pesto sauce. This recipe is super simple and takes no time at all to prepare, but you do have to wait around 50 minutes for the wings to cook.

    I've always love to eat chicken wings, but they can be really high-carb when coated with different sauces, as most contain sugar.  If you feel like eating wings, it's best to make your own sauce or just eat a savoury or dry version.  You can try making these sweet chili chicken wings made in the oven or these Instant Pot chicken legs coated with BBQ sauce. Wings are also pretty high in calories, so if you count calories, be careful not to eat too many.

    Pesto Chicken Wings

    Ingredients

    • 3 tbsp parsley pesto sauce
    • 12 chicken wings or drumsticks (or both)
    • 1 tbsp extra virgin olive oil
    • ½ tsp Himalayan salt
    • ½ tsp black pepper

    Instructions

    • Preheat your oven to 200C/400F.
    • Coat the chicken wings with the olive oil, salt and pepper. Line them on a baking tray and place it in the oven. Bake for 50 minutes.
    • Take the wings out of the oven and transfer them to a bowl. Spoon the pesto over the wings and toss until all the wings are coated. Enjoy while they're hot.
