    The BEST Low Carb Pizza Dough

    My low carb pizza dough can be used to make literally any keto baked goods.  From buns and pretzels to pizza, keto pigs in a blanket, gluten free naan and breadsticks, you’ll be able to create some of the best low carb recipes ever.  Based on my highly popular keto buns, almond flour tortillas and coconut flour tortillas recipes, this psyllium pizza dough is the best keto pizza dough you'll ever make! Trust me.

    I chose to make this with almond flour and coconut flour because it gave it the best texture as oppose to only using one type of flour.  It ends up being one real good pizza.

    This gluten free pizza contains no dairy, gluten, starches or grains so you can be sure to make a diabetic friendly pizza for yourself or family.

    Is Gluten Free Pizza Low Carb?

    No, not necessarily.  It depends on how you made it or which company you’ve bought it from.  Most gluten free pizza will be made with some sort of starch or grain flour blend so they are most definitively not low carb or keto friendly.

    For a keto-friendly gluten-free pizza recipe, make sure to stick to this dairy-free keto pizza crust recipe so you don’t go over your carb count and consume dairy.

    What is Keto Pizza Made Of?

    The main ingredients of my keto pizza dough are almond flour, coconut flour, psyllium husk powder and eggs.  The toppings you use is entirely up to you!

    I love using psyllium husk in low carb recipes as it holds everything together.  You can check out my recipes for almond flour tortillas, coconut flour tortillas or keto buns to see more recipes using psyllium as a binder.

    What does this Keto Pizza Crust Taste Like?

    My keto pizza crust recipe tastes just like whole wheat bread.  Not this one! The texture of the outside crust is crispy thanks to the coconut flour and the inside of the crust is chewy thanks to the psyllium husk powder.

    It can be made crispy or chewy and is extremely filling!  You can make two small personal pizzas or one large keto pizza.

    Is the Thin Crust Pizza Lower in Carbs?

    No, it’s not.  It’s made with the same ingredients and ends up the same size as the thick crust one.

    How Many Carbs in this Keto Pizza Crust?

    This pizza recipe has will have 35g net carbs for two whole 10"/25cm pizzas, which means that each slice will only have about 2.2g net carbs as one 10"/25cm pizza makes 8 slices, so 16 slices total.

    How to Make Low Carb Pizza Crust

    This low carb pizza crust is super easy to make.  Just mix and roll out and you’ll have homemade pizza in no time!

    In a bowl, mix all of the dry ingredients together.  Add the eggs and mix with a silicone spatula.  Just mix as best as you can.

    Add the boiling water in 3 batches and mix with a spatula.  Once it gets too hard to mix, start kneading with your hands until a big ball forms.

    The low carb dough is now ready to roll into a pizza crust.  Follow the next instructions to make a thin or thick pizza crust.

    How to Make Crispy Low Carb Pizza Crust

    You have the option to either make a crispy low carb pizza crust or a chewy thick crust.

    To make a crispy thin crust, you’ll roll out the low carb dough to about 5mm/0.2” thin.  Try to make a circle as best as you can, but you probably won’t be able to.

    With a pizza cutter, make a round circle and cut off the extra dough.  Since it’s a waste of dough to throw out, simple stick it back onto the round dough, any place you think lacks some dough, and roll it out a tiny bit more just so that the dough is all together again.

    How to Make a Chewy Low Carb Pizza Crust

    To make a thick crust pizza, you’ll roll out the dough between two pieces of parchment paper, just like the thin crust pizza.

    Do your best to create a circle.  Roll up the edges of the dough to create a perfect pizza circle and create a crust at the same time.

    Make sure that the rolled edges are all stuck to one another perfectly or else they’ll unroll in the oven while they bake.

    How to make a low carb thick crust pizza crust.

    Bake & Add Toppings

    Once you’ve rolled out your gluten free pizza crust, thin or thick, bake in the oven for 20 minutes.

    Top with some sugar free pizza sauce, your favorite low carb pizza toppings and bake once more in the oven for 15-20 additional minutes.

    Frequently Asked Questions & Answers

    Can you Freeze Keto Pizza Crust?

    Yes, you can! Simply freeze it after it’s all baked.  When ready to serve, microwave and toast it for a few minutes before serving.

    Can I Make this Pizza Crust Ahead?

    Yes, you can! Simply bake the crust before freezing.  Wrap it in a Ziploc Bag and freeze up to 2 months.

    When you’re ready to eat this keto pizza crust, take it out of the oven, let it thaw for an hour, add your toppings and bake an additional 15 to 20 minutes.

    Help! My pizza crust turned purple or grey.

    This is perfectly normal and fine.  Some brands of psyllium husk tend to turn purple or grey when baked.  The dough is still perfectly edible and tastes exactly the same, it’s only the color that is affected.

    I always suggest using the NOW Psyllium Husk powder as I’ve personally never had any problems with it.

    Help! There’s yellow bits in my pizza dough.

    Totally normal.  The yellow bits are just the egg yolks.  They’ll be gone once you bake the pizza crust in the oven.

    Can I use Whole Psyllium Husks?

    They don't work quite the same as the powdered version so I suggest grinding them in a blender first.

    Before making this recipe, make sure to read all the tips and possible substitutions to make sure your recipes comes out absolutely perfect.

    • You cannot leave out the psyllium husk powder in this recipe. It is absolutely essential.
      • If you only have whole husks, grind them in a blender first to make a powder.
    • Make sure to use boiling water and not cold water.  It helps activate the psyllium.
    • Make sure to pre-bake your crust before adding the toppings over.
    • Make sure to roll out the keto pizza dough between two pieces of parchment paper.
    • Instead of the spices, you can use any type of spices you want.  I just really like onion and garlic powder!

    Keto Low Carb Pizza Crust Recipe

    A thick or thin crust recipe to make the best keto pizzas ever!

    Equipment Needed

    • Rolling Pin

    Ingredients

    • ½ cup (70 g) coconut flour
    • 1 cup (120 g) blanched almond flour
    • 3 tbsp psyllium husk powder
    • 1 tsp baking powder
    • 1 tsp onion powder
    • 1 tsp garlic powder
    • 1 tsp chives
    • ½ tsp salt
    • 3 medium eggs
    • 1 cup (240 ml) boiling water

    Instructions

    • Preheat the oven to 180C/350F.
    • In a large bowl, add all of the dry ingredients and mix well.
      Add the 3 eggs and mix with a rubber spatula. The dough won't really be sticking together here and there will be lots of yellow spots from the eggs.
      Pour ¼ cup of boiling water at a time into the batter while mixing as best as you can with a rubber spatula.
    • When you can't mix anymore with the spatula, start kneading with your hands until the dough forms a big ball.
    • Now you can either make 2 small pizzas (about 25cm/10" in diameter) or a large one. My oven is too small to make a large one so I made two pizzas.

    For a thin crust pizza

    • Separate the dough in half. Make a ball with your hands and place the dough over a piece of parchment paper.
      Cover with a second piece of parchment paper and roll out with a rolling pin until you have about a 10"/25cm pizza. You probably won't be able to make a perfect circle so with a pizza cutter, make a circle around the dough, take the extra bits of dough that you just cut off and stick them back on the pizza dough so you don't waste any dough.
      Cover with the parchment paper one more time and just lightly roll out the circle a bit more just so that the extra dough sticks to the bottom dough layer.
      Repeat with the second half of the dough.

    For a thick crust pizza

    • Separate the dough in half. Make a ball with your hands and place the dough over a piece of parchment paper.
      Cover with a second piece of parchment paper and roll out with a rolling pin until you have about a 10"/25cm pizza. You probably won't be able to make a perfect circle, but that's okay. Take the edges of the pizza and roll them in to form a crust. Make sure the crust is well rolled and is staying in place as it can unroll in the oven when cooking.
      Continue rolling the edges of the pizza until you have a thick crust formed all around the pizza circle.
      How to make a low carb thick crust pizza crust.
    • Transfer the baking paper with the dough stuck on it onto an oven tray and bake in the oven for 25 minutes.
      Take out of the oven, top with your favourite toppings and then bake in the oven for an extra 15-20 minutes (until your pizza toppings are cooked through).

      Thank you for the recipe. The flavor was good but I found the texture to be fairly bread-y. I may use it to make "bread" for sandwiches. As for pizza crust, it was heavy even though I made two thin crusts pizza and it did not crisp up at all. I followed the directions exactly and made one on parchment paper per your instructions and one I placed directly on a pizza stone. Neither crisped up. It held together fine just, I just got zero pizza crust crunch. Is that normal? If not, any suggestions? Thanks again. Your hard work for those of us who can't have dairy protein is appreciated.
