    A Delicious Cilantro Dressing

    Avocado oil has become increasingly popular over the last few months here in Japan.  They sell it at high-end foreign food stores so I wanted to make a couple of recipes with it.  Since I have lots of cilantro on hand, I thought of making a cilantro lime vinaigrette using the avocado oil!

    What I love about this cilantro dressing is the lime.  Avocado oil has such a strong unique taste so adding the acidic lime juice balances the flavours of this dressing.  I really do think it's important to add because the two flavours really do balance each other out.

    I think that the most important part about buying avocado oil is to make sure it says cold-pressed. If it does not say that, your oil will taste rancid, like a rotten avocado.  This happens when manufacturers expose the avocado and its oil to air.

    You know when you cut an avocado up and the green part turns brown because it's been exposed to air? This also happens when you make the oil and it will essentially taste rotten. I have tried many brands of avocado oil that were not cold-pressed and trust me, that was a huge mistake!

    How to make a Cilantro Lime Salad Dressing

    Making this cilantro lime salad dressing is incredibly easy.  You just need a handful of ingredients that you simply need to add to a food processor or a blender to chop and blend together.

    I use the stems and leaves of the cilantro so to not waste any part of the herb and used fresh garlic.  Please make sure to use fresh garlic because garlic in tubes or pre-minced garlic will just not cut it.  You really want to make sure you have that strong garlic flavour in there along with the cilantro.

    I have tried making this cilantro lime vinaigrette using a stick blender and it did not work at all.  The cilantro leaves and stems kept on getting stuck to the blades and it just wasn't working out.  If you were to use a stick blender, I would chop the cilantro and garlic beforehand and then add it to the cup to mix.

    For this cilantro dressing, you can use either avocado oil or a light olive oil.  You could also a mix of both if you wanted to.  Avocado oil definitely tastes much stronger than olive oil so depending on your pallet you might want to try one over the other.

    This cilantro lime salad dressing goes extremely well with Mexican type of recipes.  I used this cilantro lime vinaigrette over my Chicken Fajita Salad and the flavours were spot on!  Using this tangy dressing over some taco chicken was absolutely perfect!  I've also used it over my spiralized salad and served it for lunch!

    If you're a fan of recipes that use both cilantro and lime, you'll definitely want to check out my cilantro lime cauliflower rice and my cilantro lime shrimp skewers!  Another possibility would be to use this dressing as a marinade for some chicken thighs or breasts and then grill them on the BBQ!

    Ingredients

    • 1 cup (30 g) cilantro (stems removed)
    • 3 tbsp (3 tbsp) avocado oil (or light olive oil)
    • 2 cloves (2 cloves) garlic
    • ½ tsp (½ tsp) Himalayan Salt
    • ½ cup (120 ml) greek yogurt (or nomal yogurt)
    • 2 (2 ) limes

    Instructions

    • Mince the garlic and chop the cilantro stems into two.
    • Add the cilantro, avocado oil, garlic, salt, yogurt into a food processor. Squeeze the juice out of the limes into the food processor.
    • Pulse until all of the cilantro has been chopped to pieces and the dressing is all mixed together, about 1 minute.
    • Pour in a glass salad jar and refrigerate.  It'll stay good in the fridge for about 4-5 days.
