    Keto Garlic Bread

    One of my favorite low carb recipes to make, this keto garlic bread is crispy, fluffy, buttery, garlicky and super cheesy.  It goes extremely well with low carb dipping sauces, on its own or served as side dish with low carb pasta.

    This low carb garlic bread resembles breadsticks or flatbread because of the way I rolled it out.   You can roll it into any shape that you like and I'm sure you could even do a pull apart bread type of garlic bread too.

    You'll find that this easy keto garlic bread can be made within an hour and that the bread itself is quite filling so pair it with a small side dish.

    Low Carb Garlic Bread Ingredients

    My low carb garlic bread uses my magic keto dough as its base.  It's then infused with some homemade garlic bread and then topped with some mozzarella cheese.

    My magic keto dough uses a combination of almond flour, coconut flour and psyllium husk powder with some spices.  It's extremely flexible and can be used in various recipes.  The keto dough itself is dairy free so perfect for those following a dairy free keto diet. Almond flour can be used for lots of keto bread and tortilla recipes too. I did, however, add mozzarella cheese to the dough for this recipe.

    Fathead vs. Magic Keto Dough

    90% of the keto garlic bread recipes you'll find on Google are made with the fathead dough.  Although I like the taste of fathead, I find it's too oily and has too many calories for one serving.  Fathead can be used to make a variety of baked goods, but I much prefer my magic keto dough as it's dairy free and it's just as flexible as the famous fathead dough.

    My magic keto dough can be used to make a variety of baked goods including this keto pizza crust, keto naan, keto empanadas, keto pretzels, keto pigs in a blanket, and more.

    Homemade Garlic Butter

    I made a simple garlic butter that went really well with this gluten free garlic bread recipe.  You'll need some common pantry ingredients to make it including butter, parmesan, garlic and oregano.

    What does Keto Garlic Bread Taste Like?

    Keto garlic bread tastes just like it sounds.  It tastes like fluffy bread coated in garlic butter and lots of mozzarella cheese.

    Cheesy Garlic Bread Nutrition

    This cheesy garlic bread recipe makes a whole lot of garlic bread, which is why it has 12 portions.  For each portion, this gluten free garlic bread has 3.23g net carbs.

    Here's the breakdown for 1/12th of the recipe (Remember it makes a lot):

    How to Make Garlic Bread

    Making this keto cheesy garlic bread is a little bit time consuming, but you should be finished within one hour with prep and cooking time included.

    How to Make Garlic Butter

    Start by making your homemade garlic butter.  Mix all of the ingredients together until nice and creamy.  Make sure you use room temperature butter or else it'll be impossible to mix.

    Make the Garlic Bread

    In a large bowl, you'll add all of the dry ingredients and the cheese.  You'll mix everything well together to make sure the psyllium husk powder is everywhere in the batter.

    Add the eggs and mix well again.  You'll notice yellow spots everywhere.  Don't worry that's from the egg yolks.

    You'll then add the boiling water to the mix and start mixing with a silicone spatula until all of the water has been poured in.  You'll notice that the psyllium and coconut flour absorb the water as soon as you pour it in so it's important that you keep mixing.

    Once it starts to be too hard to mix with a spatula, start kneading the dough with your hands until a large ball forms.

    Separate the dough into 4 (if you want to) and place one dough on top of a parchment paper and cover with another piece of parchment paper.

    Roll the dough out to the size you want.  The thinner you roll it out, the thinner your garlic bread will be and the thicker you roll it our, the thicker the gluten free garlic bread will be.  The thickness of the dough is all up to your preferences.

    I rolled mine to be about 20cm/7.8in long and 15cm/6inch wide.

    Bake the Garlic Bread

    Repeat with the remaining dough and place each rolled out dough on top of some parchment paper over a baking tray.  Bake the garlic bread for 20 minutes.

    Take the low carb garlic bread out of the oven, brush the garlic butter all over, generously, and then sprinkle the cheese all over.  Bake in the oven once more for another 15-20 minutes, depending on how crispy you like the cheese on top.

    What to Serve with Garlic Bread

    Now that you've made your homemade garlic cheese bread, you can either serve it as is, or you can serve with some delicious dipping sauces and sides.

    Low Carb Dipping Sauces

    • Zucchini Lasagna: Serve some keto garlic bread with some delicious and healthy lasagna made with zucchini noodles.
    • Keto Chicken Parmesan:  Serve with some delicious juicy chicken breasts covered in marinara sauce and parmesan cheese.

    Frequently Asked Questions

    Help! My bread turned purple or dark grey.

    Absolutely normal.  Some brands of psyllium husk powder turn baked goods that color, but other than the color, the texture and taste is absolutely fine.  I recommend using the NOW brand of psyllium husk powder as I've never had any problems with it.

    Can I leave out the psyllium husk powder?

    Nope! This recipe won't work without it.  The psyllium is there to help the almond flour and coconut flour stick together without breaking apart once baked.

    Can I use whole psyllium husks instead of powder?

    No, you can't.  If you only have whole husks, grind them in a coffee grinder first to make powder.

    Can I use tubed garlic or garlic paste?

    You can, but I recommend using fresh garlic as it tastes much better!

    Can I use another type of cheese?

    Yes, any type of cheese will work for this recipe. I chose mozzarella because it stretches really nicely when melted.

    As for the parmesan, any other cheese will work, but parmesan goes really well with garlic butter so I really recommend it! You can use grated or shredded parmesan.

    Can I use margarine instead of butter?

    You can, but I highly recommend butter for its taste and health benefits.

    Tools Needed to Make This Gluten Free Garlic Bread

    Rolling Pin: You'll need a standard rolling pin to roll out the dough.

    Pizza Cutter: It's helpful to have a pizza cutter so that you can cut strips of this low carb garlic bread recipe.

    Mixing Bowl: You'll need a large mixing bowl to mix all of the ingredients.

    Garlic Press: A garlic press is really hand to have if you want super thin and juicy garlic that you just can't get with a knife.

    Ingredients

    • 1 cup (120 g) mozzarella cheese (grated (or any other type of cheese))

    Garlic Bread

    • ½ cup (70 g) coconut flour
    • 1 cup (120 g) almond flour
    • 1 tsp baking powder
    • 3 tbsp psyllium husk powder
    • 1 tsp onion powder
    • 1 tsp garlic powder
    • 1 tsp oregano
    • ½ tsp salt
    • ½ cup (60 g) mozzarella cheese (grated (or any other type of cheese))
    • 3 medium eggs
    • 1 cup (240 ml) boiling water

    Garlic Butter

    • ¼ cup (30 g) butter (room temperature)
    • 2 tbsp (15 g) parmesan cheese (grated or shredded)
    • ½ tbsp oregano
    • 2 cloves garlic
    • ½ tsp salt

    Instructions

    Garlic Butter

    • Crush the garlic with a garlic crusher. Mix all of the garlic butter ingredients into a small bowl. Set aside for later.

    Garlic Bread

    • Preheat the oven to 180C/350F.
    • In a large bowl, add all of the garlic bread ingredients except the eggs and boiling water. Mix well with a whisk. Add the eggs into the flour mixture and mix as best as you can with a silicone spatula.
    • Pour in the boiling water, a little at a time, into the dough and start mixing with your spatula. Once all of the water has been poured in, start kneading the dough with your hand until a big ball forms.
    • Separate the dough into 4 portions ( I find it easier to roll out the dough if it's smaller).
      Place one dough on top of a piece of parchment paper and cover with another piece of parchment paper. Roll out to desired thickness. I personally rolled mine out to 20x15cm/7.8x6".
      Transfer the rolled out dough to a baking tray on top of some parchment paper.
      Repeat with the leftover dough.
    • Place the rolled out dough into the oven and bake for 20 minutes.
      Once baked, take out of the oven and brush a generous amount of garlic butter all over each garlic bread. Top with the 1 cup(120g) of mozzarella cheese.
    • Place back into the oven and bake for an additional 15-20 minutes depending on how you like your mozzarella, crispy or melty.
    • Serve immediately! It's best served hot while the cheese is still melty!

        Hi Susan, no sorry it won't work without the psyllium~ It works like glue in this recipe and without it everything would fall apart.
